1 tsp unflavored gelatin
1 Tbsp coldwater
2 Tbsp boiling water
1 cup heavy or whipping cream
2 Tbsp sugar
1 tsp vanilla
1/2 cup sweetened peaches, drained and diced
Sprinkle gelatin onto cold water in small glass dish; allow to stand a few minutes to soften. Add boiling water and stir until gelatin in dissolved. Whip cream and sugar until stiff, beat in gelatin mixture and vanilla. Fold in diced peaches.
