  • 2 egg whites
  • 3/4 cup sugar
  • 2 tablespoons water
  • 1/4 teaspoon cream of tartar
  • 1/3 cup light corn syrup
  • 1/4 teaspoon salt
  • 1/2 teaspoon cherry extract
  • 1/2 teaspoon almond extract
  • 1 drop red food coloring, or more if desired

Add the egg whites, sugar, water, cream of tartar, corn syrup, and salt to the top of a double boiler over boiling water. Beat the mixture with an electric mixer until it forms stiff peaks.

Carefully remove the top of the double boiler and set it on a heat-proof surface. Add the cherry and almond extracts and the food coloring, as desired. Beat with the electric mixer until the cherry frosting is thick and spreadable.
