Cherry Frosting

- 2 egg whites
- 3/4 cup sugar
- 2 tablespoons water
- 1/4 teaspoon cream of tartar
- 1/3 cup light corn syrup
- 1/4 teaspoon salt
- 1/2 teaspoon cherry extract
- 1/2 teaspoon almond extract
- 1 drop red food coloring, or more if desired
Add the egg whites, sugar, water, cream of tartar, corn syrup, and salt to the top of a double boiler over boiling water. Beat the mixture with an electric mixer until it forms stiff peaks. Carefully remove the top of the double boiler and set it on a heat-proof surface. Add the cherry and almond extracts and the food coloring, as desired. Beat with the electric mixer until the cherry frosting is thick and spreadable.
