Chocolate Cake
12 oz flour
12 tbsp cocoa powder
8 eggs
6 oz sugar
4 oz butter

Preheat oven to 350. Butter and flour two 8 inch cake pans. (I use Pam and parchment papper). Combine dry ingredients in a bowl and set aside.

In a metal mixing bowl over boiling water whisk eggs and sugar until 110. Remove and continue whisking until fluffy. Fold in dry ingredients. Then fold in melted butter. Divide cake batter. Bake for approximately 25 minutes or until firm.

Cream Cheese Buttercream Frosting
12 cups confectioners sugar
2 cups butter
2 cups cream cheese
4 tsp vanilla
2-4 tsp whipping cream

Cherry Filling
3 cans favorite pie filling 2 2 cans pie filling and 1 jar cherry preserves mixed together

In a standing mixer cream together butter sugar and cream cheese. Add vanilla and cream. Mix for another minute.

After cake has cooled cut both layers in half to form 4 round cakes. Put first layer down and spread with 1/3 pie filling. Place a second layer and cover with pie filling repeat until done. Spread with buttercream frosting. Garnish with maraschino cherries.
