Chocolate Cupcakes with Chocolate Cream Cheese Frosting!

2 cups sugar
1 3/4 cup all purpose flour
3/4 cup cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract OR almond extract
1 cup boiling water

Heat oven to 350 degrees. Place paper liners in 24 cupcake tins.

Combine DRY ingredients in a large bowl.
Add eggs, milk, oil, and extract then beat on MED with electric mixer (this method must be used with cake mixes to insure a high rise in your cakes) Mix for 2 minutes. Stir in Boiling water.. batter will be THIN. Divide Batter between 24 lined cupcake tins.
Bake in on middle rack for 30 - 35 minutes...times may vary with your oven temp!! Cool on Rack!! In pan.

Chocolate Cream Cheese Frosting for Cupcakes

While cupcakes are cooling... Bring 8 TBSP Butter and 8 ounces of Cream Cheese to room temp (softened).

When soft enough to work with:: Beat Butter and Cream Cheese with mixer...
Add in:: 1/2 cup cocoa powder, 1 tsp vanilla or almond extract, 4 cups of powdered sugar and a few drops of milk or cream to bring frosting to a smooth consistency, It will be glossy and smooth and delicious.

Frost yo' cupcakes and refrigerate any leftover frosting for up to 1 week, covered.
