Vietnamese Green Papaya Salad

***Salad***
- 4 cups shredded green papaya (or jicama to substitute)
- 1 cup beef jerky (yes, beef jerky, not Slim Jim brand), chopped
- 1/2 cup crushed peanuts
- 1/2 cup chopped cilantro
- 1 lime, juiced
***Dressing***
- nuoc nam (Vietnamese anchovy sauce) to taste
- rice vinegar to taste
- chili sauce to taste
- sugar to taste
- water to taste
Mix all of the ingredients for the dressing, according to your taste. Don't be thrown off by the anchovy sauce; it imparts a wonderful flavor. Spoon out dressing on the bottom of the plate. On it, layer the papaya, beef jerky, peanuts, cilantro and splash the top of the salad with lime juice.
