Papaya Scallop Salad

- 1/2 cup chicken broth
- 1 pound bay scallops
- 1/4 cup chopped fresh cilantro
- 1 teaspoon sugar
- 1/2 teaspoon grated lime peel
- 1/4 cup lime juice
- 2 tablespoons oil
- 1 papaya, peeled, seeded, cubed
- 4 Bibb lettuce leaves
In medium skillet, bring broth to a boil. Add scallops. Cover; reduce heat to medium. Cook 2 to 3 minutes or until scallops turn opaque. Drain well; set scallops aside. Meanwhile, in medium bowl, combine cilantro, sugar, lime peel, lime juice and oil; blend well. Add cooked scallops and papaya; mix well. To serve, place lettuce leaves on individual plates. Spoon salad onto leaves. If desired, garnish with fresh cilantro sprigs.
