I have loved tuna and noodles since I was a kid. It was a bit more of a hard sell to my boys, but this recipe did the trick!
Serves 4

Ingredients
1 medium white onion, diced
2 Tablespoons oil
1 teaspoon minced garlic approximately 1 clove
1 teaspoon fresh chopped tarragon
1 tablespoon fresh basil, chopped
1 tablespoon fresh mint chopped
2 tablespoons lemon juice or the juice of 1 fresh lemon
zest of one lemon(optional)
15 oz can of italian flavored diced tomatoes
1 tablespoon capers, chopped
1/2 cup parmesan cheese
1 cup feta cheese
1 cup or 14 oz can of artichoke hearts
1 cup fresh spinach leaves
1/2 cup sun-dried tomatoes
1/2 cup jar of roasted red peppers
6 oz. albacore tuna
1/2 cup of greek yogurt
ground pepper to taste
1/2 bag of broad noodles-cooked according the directions

Directions:
1. Cook noodles according to package direction
2. Heat the oil in a large skillet over medium heat, add onions, garlic and saute until soft.
3.Add the rest of ingredients except the feta cheese.
4. Simmer until the sauce is hot and slightly thickened
5. Add the cooked neoodles in and toss lightly.
Put into serving platter and sprinkle with feta cheese, and additional Parmesan if desired.
Serve with hot sour dough bread and a green salad.
