This soup is a kid hit. It's colorful and healthy! I added spinach & peas to get all the veggies in I could! Serve with crusty bread and shredded Parmesan cheese. Add 1 pound of ground meat or cut up rotisserie chicken to make it even heartier!

Serves-6
1-2 Tablespoons olive oil
1 medium -small diced onion
4 ribs celery-small dice
2 cups frozen peas & carrots
2 garlic cloves minced
1(14.5 oz) Italian stewed tomatoes
2(14.5 oz) veggie broth
3/4 cups red lentil-rinsed well.
salt & pepper to taste
1/2 teaspoon thyme
1(10oz) bag of fresh spinach-chopped
4 cups water
1/2 cups macaroni elbow or digitalini
1 cup fresh basil-chopped
2 slices of bread-torn up into pieces

In a dutch oven heat olive oil over medium high heat saute onions,celery and garlic until tender.
Add the remainder of the ingredients EXCEPT pasta and reduce heat to simmer. Cover & simmer about 20 minutes until lentils are tender.
Bring mixture to a boil over medium high heat, add macaroni.
Boil uncovered until macaroni is tender about 10 minutes.
Serve with crusty bread and grated Parmesan cheese.
