I found this recipe and thought it was interesting and set about tweaking it. No one makes macaroni salad like my Mom, but this one comes real close!
1 pound elbow or rotini macaroni
1(14 oz) can of sweetened condensed milk
1/2-1 cup sugar-to taste
1 clove garlic minced
1 cup white vinegar
1/8 cup Dijon mustard-optional
2 cups real mayonnaise-NOT miracle whip
1 cup chopped green pepper(1 large)
1/2 cup yellow or red bell pepper(these tend to be sweeter!)
4 carrots-large grated or matchstick cut.
1 cup red onion small dice
2 hardboiled eggs large chopped or sliced
1 cup grated sharp cheddar cheese
Salt & pepper to taste
Fresh chopped chives or green onions for serving.
Cook macaroni, drain and cool.
Mix together sweetened condensed milk, sugar, minced garlic clove, vinegar, mustard and mayonnaise to a smaller bowl; taste for seasoning and sweetness adding sugar as needed to taste
Add dressing and remaining ingredients macaroni and toss lightly.
Chill for several hours or overnight.
Sprinkle with chopped chives or chopped green onions just before serving.
Note: Use real mayonnaise, not miracle whip.
My family likes mustard and a sweeter dressing, I prefer a less sweet salad so that is the reason for the sugar at 1/2-1 cup.
