CORNED BEEF DINNER-CROCK POT -oval 5qt.
Serves 6-8
Ingredients
3 lbs. corned beef brisket with pickling spices
2 medium onion-spanish or vidalia, sliced
4-6 whole fresh carrots
4-6 ribs or stalks of celery
Small head of cabbage-cut into quarters
4-6 small red potatoes
Water.
Directions:
I place my corned beef with pickling spices with sliced onions in a small cooking bag & seal it. I then wrap corned beef tightly in 3 layers of aluminum foil. This I place in my slow cooker with a small bowl in the bottom of the crock pot insert and I add 1-2 cups of water into the bottom of the crock pot insert.
I then place the wrapped corned beef in the slow cooker.
The last 2 hours of cooking I open unwrap the meat & open up the bag & place the veggies into the bag. Reseal the bag and place back into the crock pot and cook for the remainder of the time.
Cover and cook on LOW - 8 hours.
HIGH-4 hours
Clean veggies, and peel carrots.
Cut each carrot & celery into 3 pieces, cut potatoes into halfs if they are large. You want all the veggies to be the same size for uniform cooking. Put all the veggies on top of the brisket for the last 2 hours of cooking or until the veggies are tender.
Tips- Vegetables can be steamed or boiled separately from the Corned Beef in the crock pot.
The vegetables can also be roasted in the oven, this is wonderful accompaniment to the dish!
You can add your favorite root veggies such as sweet potatoes, yams, turnips or parsnips.
Roast some garlic with the veggies, they are like candy!
