This is my brothers recipe. He serves them with smoked sausage, cornbread and cheese grits. Yum!


4 to 6 slices smoked bacon

2 bunches of collard greens, washed, stemmed and cut into 1 inch pieces

2 jalapenos, thinly sliced

1/3 cup apple cider vinegar

salt and fresh ground black pepper to taste

1/8 cup hot sauce


In a large pot, brown bacon. (Do not let it become crisp).

Remove and cool.

Add 6 cups of water to the same pot and bring to a boil

Return bacon pieces to pot.

Add jalapenos, vinegar, hot sauce and salt and pepper to taste

Cover and simmer over low heat for about 1 hour until greens are tender.
