Makes 6 servings.
1 pound sirloin steak, chopped
1 onion, chopped
1 stalk celery, chopped
1 envelope taco seasoning
1/4 c. water
2 15-oz. cans refried beans
1 4-oz. can chopped green chiles
1 c. shredded Old Cheddar cheese
2 green onions, sliced
1 tomato, peeled, seeded and chopped
1/2 cup sliced ripe olives, chopped
1 1/2 cups crushed tortilla chips
Preheat oven to 350F; spray a 2 1/2 quart baking dish with cooking spray.
In a large skillet over medium heat, cook beef, onion and celery until meat is no longer pink; drain.
Stir in taco seasoning, water, beans and green chiles.
Pour into baking dish and bake, uncovered, at 350F for 30 minutes, or until heated through.
Top with cheese, green onions, tomato, olives and chips to serve.
