1 lb beef flank steak, well trimmed and cut into 1 inch chunks
1/4 cup flour
1/2 tsp garlic powder, onion powder, salt and pepper
4 medium carrots, cut into 1 inch chunks
2 large celery ribs, cut into 1/2 inch chunks
1 (10 1/2 oz) can beef broth
5 medium potatoes, cut into 1 inch chunks

In a medium bowl, combine flour and seasonings. Toss in beef chunks. Coat a Dutch oven with cooking spray and heat over medium-high heat. Add meat, in small batches and brown on all sides.

Remove and set aside until all the meat has been browned. Return meat to pan and add vegetables except potatoes. Mix the remaining seasoned flour with the beef broth and add to the Dutch oven.

Cover, and reduce heat to low and simmer for 40-45 minutes. Add potatoes; cover and simmer for 25-30 minutes or until potatoes are tender. Serves 4-6
