Makes 6 to 8 servings.
2 T. butter
1 lb. mushrooms, sliced
1 med. onion, chopped
2 10 oz. pkg. frozen spinach, cooked, drained and chopped
1/2 tsp. salt
1/4 c. butter, melted
1 clove garlic, minced
2 c. shredded Muenster cheese
Preheat oven to 350F.
Heat 2 tablespoons butter in a skillet and saute mushrooms until tender. Remove from pan.
Add onion to pan and saute until tender but not brown.
Put spinach, salt and melted butter in a medium bowl.
Add onion and garlic and mix well.
Spoon the mixture into a 1 1/2-quart baking dish and press down gently. Sprinkle half the cheese over top.
Add sauteed mushrooms and cover with remaining cheese.
Bake at 350F for 20 minutes, until the cheese is lightly browned and bubbly.
