Makes 8 servings.

Batter

2 c. fresh or frozen blueberries
1 tsp. ground cinnamon
1 tsp. lemon juice
1/2 tsp. grated lemon rind
1 c. all-purpose flour
3/4 c. granulated sugar
1 tsp. baking powder
1/2 c. milk
3 T. butter, melted

Topping

3/4 c. granulated sugar
1 T. cornstarch
1 c. boiling water

Preheat oven to 350F.
Spray an 8-inch square baking dish with cooking spray.
Toss blueberries with cinnamon, lemon juice and rind; spoon into baking dish.
In a small bowl, combine flour, sugar and baking powder; stir in milk and butter. Spoon over berries.
Prepare Topping. Combine sugar and cornstarch; sprinkle over batter.
Slowly pour boiling water over batter in baking dish.
Bake at 350F for 45 to 50 minutes, or until a cake tester comes out clean.
Serve with ice cream.
