BROILED - KENTUCKY DERBY HOT BROWNS

Make 4 servings.

1/2 c. butter
6 T. all-purpose flour
3 1/2 c. milk
3/4 c. grated Parmesan cheese
1 egg, beaten
1/4 c. whipping cream, whipped
salt and pepper
8 slices French or Italian bread, toasted
8 fresh tomato wedges
1 1/2 lb. sliced turkey breast
pinch paprika
8 strips crisp-fried bacon
2 T. chopped pimiento
1/4 c. chopped fresh parsley

Preheat broiler in oven to hot.
In a saucepan, melt butter over medium heat; add flour, stirring until butter and flour have mixed well.
Add milk and 6 tablespoons Parmesan cheese. Bring mixture to a boil, stirring frequently.
Cook an additional 5 minutes, stirring frequently; reduce heat to low.
Stir one tablespoon of roux into beaten egg to temper. Stir egg mixture into roux; do not allow sauce to boil.
Remove from heat; fold in whipped cream. Add salt and pepper to taste.
Cut 4 bread slices diagonally into two, making 4 whole slices and 8 triangles.
For each Hot Brown, place 1 whole bread slice in the center of an oven-proof place.
Place one triangle on each side.
Tuck a tomato wedge on top of each triangle.
Cover with a liberal amount of sliced turkey; sprinkle with Parmesan cheese.
Pour on a generous amount of sauce; top with Parmesan cheese; sprinkle with paprika.
Place under broiler until sauce is speckled brown and bubbly.
Remove from broiler and cross two slices of bacon on top; sprinkle with parsley and top with a bit of pimiento. Serve hot.
