Makes 4 servings.

1/4 c. minced red pepper
1/4 c. minced green onion
1/4 c. mayonnaise
1 T. fresh lemon juice
1/4 tsp. seasoned salt
cayenne pepper
1 egg, beaten
1 c. dry bread crumbs
2 6 oz. cans pink salmon
3 T. Butter

Lemon Herb Mayonnaise

3/4 c. mayonnaise
1 T. fresh lemon juice
1 T. prepared horseradish
2 tsp. chopped fresh thyme
1 tsp. chopped fresh dill
salt and pepper

In a small mixing bowl, combine red pepper, green onion, mayonnaise, lemon juice, seasoned salt and cayenne pepper.
Taste and adjust seasonings; set aside.
Drain salmon; remove any bones and skin and flake with a fork
Add to mayonnaise mixture along with egg and 4 tablespoons. bread crumbs.
Divide and form into 8 equal sized balls; roll in remaining bread crumbs.
Flatter into cakes about 1" thick.
Melt butter in heavy skillet over medium heat.
Fry salmon cakes for 3 to 4 minutes per side.
Meanwhile prepare Lemon Herb Mayonnaise
In a small bowl, combine mayonnaise, lemon juice horseradish, thyme and dill; stir to blend.
Season with salt and pepper to taste.
Serve with Salmon Cakes.
