Makes 6 to 8 servings.

6 large baking potatoes
1/2 c. butter
1 c. grated Parmesan cheese
2 green onions, minced
1 1/2 tsp. salt
black pepper
1 c. whipping cream
1 c. fine dry bread crumbs
2 T. chopped parsley
1/4 c. butter, melted

Preheat oven to 375F.
Bake potatoes until tender.
Split and scoop hot potato into mixing bowl. Break up with fork.
Add 1/2 cup butter and 1/2 cup of the Parmesan cheese, onion, salt and pepper. Toss with fork to combine.
Spread in lightly greased shallow two-quart baking dish.
Pour whipping cream over potato mixture.
Combine crumbs, remaining 1/2 cup Parmesan cheese, parsley and melted butter. Sprinkle over potatoes.
Bake at 375F for 20 minutes, or until browned and heated through.

*The casserole can be prepared ahead of time. Potato mixture may be covered and refrigerated before adding the whipping cream and topping. Increase baking time to 40 minutes.

**If preferred, save the potato skins and stuff the cheese-potato mixture back into the jackets.
Divide the whipping cream and topping evenly over them. Heat through. Brown the topping under broiler at the last minute.
