To a blender or food processor, add two grilled or roasted red peppers, skin removed, two roughly chopped (grilled to remove skin) tomatoes, two cloves of garlic, two tablespoons of good vinegar (like Banyuls), two tablespoons of olive oil, and salt to taste. Blend on high until smooth, about 15 seconds, and drizzle over grilled vegetables.
