Stir-Fried Turkey with Mixed Vegetables

***Marinade***

  • 1 teaspoon dark sesame oil
  • 2 tablespoons light soy sauce
  • 2 tablespoons finely minced fresh ginger
  • 2 cloves garlic, peeled and chopped
  • 3/4 pound turkey breast, cut in strips

***Sesame Sauce***

  • 1/2 cup chicken stock
  • 4 teaspoons light soy sauce
  • 1 tablespoon red wine vinegar
  • 1 tablespoon sesame seeds
  • 1 teaspoon sesame oil
  • 1/8 teaspoon black pepper

***Stir-Fry***

  • 4 teaspoons peanut oil
  • 1 small red bell pepper, seeded and cut in 1/4-inch wide strips
  • 1 cup broccoli flowerets
  • 1/2 cup sliced fresh mushrooms
  • 1/4 cup snow peas
  • 4 scallions, chopped
  • 1 cup sliced Chinese cabbage

Combine the marinade ingredients (except the turkey) in a non-reactive container or zip-top plastic bag. Add the turkey, mix well, and set aside to marinate for 30 minutes at room temperature.

Meanwhile, mix together the sauce ingredients in a bowl and set aside.

Heat half of the peanut oil in a wok or large skillet over high heat. Remove the turkey from the marinade and add to the skillet. Cook for 1-2 minutes or until cooked. Remove the turkey from the wok and set aside.

Add the remaining oil to the wok. Add the bell pepper, broccoli, and snow peas to the wok. Cook, stirring constantly, for 1 minute. Add the scallions and cabbage. Cook, stirring constantly, for 1 minute.

Add the sauce mixture to the wok and cook, stirring constantly, for 2 minutes. Stir in the turkey and mix to coat it in the sauce.

Serve hot, over rice or Asian-style noodles.
