8 oz ziti, mostaccioli or other medium pasta shape, cooked al dente, drained
1 1/2 tbsp olive oil
2 scallion, finely chopped
1/2 tsp Italian seasoning
2 tbsp horseradish sauce
1/2 cup skim milk
1 cup shredded sharp cheddar cheese
1 1/2 cup cooked mixed vegetables
Salt and pepper, to taste

While pasta is cooking, saute scallions in oil until limp. Remove from heat and stir in next 4 ingredients. Cook over medium heat until thickened. Stir in cooked vegetables and heat. Place pasta in a large, heated bowl and toss with sauce. Serves 4-6
