• 1lb. hot or mild sausage
• 1-cup seasoned cracker crumbs
• 2-cups frozen hash browns
• 6-oz. Colby-jack cheese (cut into small chunks)
• ½ teaspoon onion powder
• ½ teaspoon garlic powder
• ½ teaspoon paprika
• ½ teaspoon Italian seasoning
• ½ teaspoon black pepper
• ½ teaspoon white pepper
• ½ teaspoon Mexican chili powder
• ½ cup chopped Vidalia onion
• ½ teaspoon rib seasoning
• 5-eggs; beaten
• 3-tablespoons milk
• 1-cup water

1. Pour cup of water in iron skillet. Put the sausage in the skillet in the water. Brown sausage in water until done.
2. Mix hash browns, spices, onions and 3-oz.( cut the 6oz. block of cheese in half to get 3-oz.) of cheese together.
3. Place this mixture in a lightly buttered casserole dish.
4. In a separate bowl, mix beaten eggs, and 3 tablespoons of milk together. Pour this in the casserole dish over the potato mixture.
5. Place this in preheated oven and bake at 350 F. for 45 minutes. The last 5 minutes of baking time, cut up the remainder of the cheese and place it on the casserole and allow melting. Top with cracker crumbs and bake for 10 additional minutes. Serve
