3 Tablespoon butter
2 Tablespoon vegetable oil
1 green onion finely chopped
2 Tablespoon red bell pepper
1 clove garlic minced
2 Tablespoon heavy cream
1 Tablespoon dyjon mustard
1 egg
1/2 teaspoon finally chopped parsley
cayenne pepper to taste
1 cup bread crumbs
1/4 cup grated parmesan cheese
1 lb lump crab

Saute onion, bell pepper and garlic. Add cream, mustard, egg, parsley, cayenne pepper, 1/2 cup bread crumbs and mix well. Gently FOLD in crab. Form into 8 patties about 1/2" thick. In a bowl, combine remaining bread crumbs with Parmesan cheese. Pat this topping onto both sides of patties and refrigerate until firm, at least 2 hours (this makes for easier handling).
To cook, combine oil and remaining butter in skillet and cook over medium heat until golden brown (approximately 3 minutes per side)
(These can be baked at 400 degrees for 10 minutes but will not be brown)
