Vinigarette:
A. 2 Tbs. olive oil
A. 2 Tbs. balsamic vinegar
A. 1 Tbs. chives, snipped
A. 2 tsp. fresh basil, snipped
A. 1/2 tsp. Dijon mustard
A. pinch ground black pepper
Mix all A. ingredients. Cover and chill until ready to serve.
Salad:
B. olive oil
B. 3 lg. yellow bell peppers, sliced into rings
Brush pepper rings with a generous amount of olive oil and grill over med-high heat. Grill about 5 min. until crisp but tender, turning once halfway through.
C. 3 lg. heirloom tmatoes, seeded and cut into rings.
C. 2/3 C. crumbled gorgonzola (or blue cheese)
C. fresh spinach leaves
To serve, line 4 to 6 plates with spinach. arrange pepper and tomato rings (about 2 to 3 each) on top of spinach. Sprinkle with crumbled cheese. Shake or stir dressing to mix; drizzle over salads.
Serves 4-6
