1 large bunch spinach
½ cup pinenuts either whole or ground
2 - 3 garlic cloves, pressed
½ lemon, juiced
2 T. prepared Dijon mustard
2 T olive oil
1 sprinkle freshly ground white pepper
1 dash sea salt
Mix all just before serving. Garnish with parmesan if desired.
Made 8-24-08 and Larry and I devoured the whole salad!!
