2 c. chicken, cooked and chopped
1 1/2 c. Monterey Jack cheese
1/2 c. roasted red bell peppers, sliced
4.5 oz. can green chilies, chopped
1 c. sour cream
10 oz. can enchilada sauce
8 7 inch flour tortillas.
1 c. shredded cheddar cheese
Combine chicken, monterey jack cheese, roasted peppers, chilies and sour cream. Spread each tortilla with 2 t. of enchilada sauce and 1/3 c. chicken mix. Roll and place seam side down in greased 9 x 13 inch baking dish. Top with remaining enchilada sauce and cheese. Cover and bake 45 minutes. Remove cover and bake 5 more minutes. Serve with lettuce, tomato, avocado and sour cream.
