4 chicken breasts, boneless, skinless, cooked and cubed
2 T. butter
1 green pepper, chopped
1 onion, chopped
2 10 oz. can diced tomatoes and chilies
1 10 3/4 oz. can cream of mushroom soup
1 10 3/4 oz. can cream of chicken soup
12 6 inch tortillas, cut into quarters
2 c.or 8 oz. shredded cheddar cheese, divided.
Saute green pepper and onion in butter. Stir in chicken, tomatoes, green chilies and soups.
Place 1/3 tortilla quarters in greased 9 x 13 baking dish. Top with 1/3 chicken mix and sprinkle with 2/3 c. cheese.
Repeat layers twice, reserving 2/3 c. cheese.
Bake 325 degrees for 35 minutes. Sprinkle with remaining cheese and bake 5 more minutes.
