2 lbs. cooked extra large shrimp, peeled
1 medium purple onion, thinly sliced and separated into rings
2 lemons, thinly sliced
1 cup pitted ripe olives
Combine above ingredients
1/2 c. olive oil
1/3 c. fresh parsley
3 T. lemon juice
3 T/ red wine vinegar
1 - 2 garlic cloves, minced
3 bay leaves
1 T. fresh basil, minced
1 t. salt
1 t. ground mustard
1/4 t. pepper
In a container with a lid, combine above ingredients and shake until mixed. Pour over shrimp mixture. Toss and refrigerate 24 hours. Flip container several times.
