12 gingersnap cookies
3 eggs, at room temperature
1 14 oz. can sweetened condensed milk
3/4 c. freshly squeezed lime juice (6 to 7 Persion limes or 14 Key limes)
Grated lime zest from all limes
1 t. vanilla
1/3 c heavy whipping cream, whipped
Preheat oven to 325 degrees. Line 12 muffin cups with paper liners. Spray each iner with non stick spray coating. Place cookie in each liner. Whisk together eggs, milk, lime juice, zest and vanilla until well blended. Pour scant 1/4 c. lime mix into each liner. Bake 16 to 19 minutes until firm. Do not overbake. Cool then top with whipped cream.
