- 2 pounds lean pork, cut into cubes
- 1 large onion, coarsely chopped
- 1 large green bell pepper, seeded and coarsely chopped
- 4 cloves garlic, minced
- 1 can (4 ounce size) diced green chiles
- 2 jalapenos, seeded and sliced
- 4 medium tomatillos, peeled and coarsely chopped
- 2 teaspoons dried oregano
- 1 teaspoon crushed red pepper flakes, or to taste
- 2 teaspoons dried sage
- 1 teaspoon ground cumin
- 1/2 cup beer
- salt and pepper, to taste
Heat the oil in a large skillet over medium heat. Add the pork, onion, bell pepper, and garlic. Cook, stirring frequently, until the pork is lightly browned and the onion is soft. Transfer the mixture to the crock pot. Add the green chiles, jalapenos, tomatillos, oregano, crushed red pepper flakes, sage, cumin, beer, salt, and pepper to the crock pot. Cover the crock pot and cook on low heat for 4 hours or until the pork is tender. Serve hot.
