Low-Fat Avocado-Tomato Salsa

- 1/2 cup chopped red onions
- 1 jalapeno pepper, seeded and chopped
- 2 tablespoons snipped fresh parsley
- 1 tablespoon red wine vinegar
- 2 teaspoons grated lime peel
- 1 teaspoon lime juice
- 1/4 teaspoon ground cumin
- 2 tomatoes, diced
- 1/4 avocado, cubed
Combine the onion, jalapeno, parsley, vinegar, lime peel, lime juice, and cumin in a bowl. Fold in the diced tomato and avocado and just mix gently to combine. Let the salsa stand for 15 minutes for the flavors to meld then serve.
