1/2 cup dry white wine
1/3 cup olive oil
Grated zest of 1 lemon
3 tbsp fresh lemon juice
1 garlic clove, minced
3 tbsp chopped fresh parsley
1 tbsp oregano
Salt
1/4 tsp crushed red pepper
1 lb wild shrimp
In a medium glass bowl, mix all ingredients. Marinate shrimp about 1 hour, and then grill. Makes about 1 1/4 cups, enough for 2 lb of shrimp.
