1 (1lb) loaf French bread, unsliced
2/3 of one 8-oz package of cream cheese
1/3 cup part-skim ricotta cheese
1/3 cup apricot preserves
5 eggs
1-1/4 cups milk
1/2 tsp vanilla
1/4 tsp ground cinnamon
dash ground nutmeg
2 tbsp butter
Cut the French bread into diagonal slices about 1 inch thick. Then cut pocket in each slice, cutting from the top-crust side almost to the bottom-crust side. In a small mixing bowl, stir together softened cream cheese, ricotta cheese, and apricot preserves. Spoon about 1 tbsp of the cheese mixture into each pocket. In a mixing bowl beat eggs, milk, vanilla, cinnamon, and nutmeg until combined. Dip stuffed bread slices into egg mixture. On a griddle or skillet, heat butter. Add stuffed bread slices. Fry over medium heat until golden brown, turning once (allow about 1-1/2 minutes for each side). Serves: 7 (2 slices per person).
Serve with Orange Syrup:
1/2 cup butter
1/2 cup sugar
1/2 of one 6-oz can frozen orange juice concentrate (1/3 cup)
Combine ingredients in small saucepan. Cook and stir over low heat just until butter is melted. Do not boil. Remove from heat and cool for 10 minutes. Using a rotary beater, beat until slightly thickened.
