1/2 of an 8 oz pkg cream cheese, softened
1 (16 oz) pkg powdered sugar, sifted
1/8 tsp peppermint oil or 1/2 tsp almond extract*
2 to 3 drops food coloring or food coloring paste (optional)
granulated sugar

Beat cream cheese until fluffy. Slowly add sifted powdered sugar beating until smooth. Add oil and food coloring if using, mix well. Shape into disk about the size of quarters and roll in granulated sugar. Can be pressed into candy molds. Chill 1 to 2 hours.

Can be frozen between sheets of waxed paper in an airtight container for up to two months. Thaw in frige.

*Best if made with peppermint oil.

Makes 6 dozen.
Plenty for 50 quest if serving wedding cake and nuts.
