Vinaigrette
1 or 2 cloves garlic, finely mashed
1/4 tsp kosher salt
1 tsp dijon mustard
1 tbsp lemon juice
2 tsp white vinegar
1/2 cup vegetable oil

Salad
1 heat Boston or Bibb lettuce
1 sweet orange or red bell pepper, slivered very thinly
1 tbsp minced parsley
Slivers of onions
Pepper, to taste
Curls of Parmesan cheese

Prepare vinaigrette by mashing garlic with salt. Stir in remaining ingredients and adjust seasoning to your taste.

Fan lettuce on a large serving plate. Layer with peppers and onion. Dust with pepper and cheese. Drizzle on vinaigrette.

Serves 4-6
