12 jumbo shrimp, shelled and deveined
3 tsp olive oil
1 cup coarse bread crumbs
1 clove garlic, crushed
1 tbsp finely chopped flat leaf parsley
1 tsp grated lemon zest
1 tbsp fresh lemon juice
1 tbsp chopped p flat leaf parsley

Make a slit in the outside curve of each shrimp. Spray a baking pan with olive oil spray. Arrange shrimp on the pan. Heat 2 tsp olive oil in a skillet. Add bread crumbs and cook, stirring over medium heat until bread is golden. Add parsley, garlic and lemon zest; stir for 1 minute. Remove from heat.

Preheat oven to 450. Carefully pack the bread mixture into opening in each shrimp, dividing the bread crumb mixture evenly between the shrimp. Brush or drizzle each shrimp with remaining oil. Bake until shrimp are cooked through, about 5 minutes. Sprinkle with lemon juice before serving. Serves 4
