6 slices white bread, cubed
2 cups frozen tater tots
1 pound of mild sausage, cooked, crumbled and drained
1/2 onion, diced (sauteed with sausage)
1 tomato, sliced
8 oz package of sliced mushrooms, sauteed
3 cups of grated extra-sharp Cheddar cheese
8 eggs
1-1/2 cups of milk
1 cup heavy cream
1 teaspoons prepared yellow mustard
1/2 tsp salt and pepper

Spray a 13x9 casserole dish with non-stick cooking spray. Place the tater tots in the casserole followed by cubed bread crumbs. Evenly distribute the sausage/onion mixture over the bread cubes followed by sauteed mushrooms. Sprinkle evenly with cheese.

In a medium bowl, combine the eggs, cream, milk, mustard, salt, pepper and mix well. Pour the egg mixture over the casserole. Line the top of the casserole with sliced tomatoes. Cover with plastic wrap and refrigerate overnight. The next morning, remove the casserole from the refrigerator and preheat oven to 350 degrees. Remove the plastic wrap and bake casserole for 1 hour.
