1 lb uncooked linguine
Juice of 1 lemon
12 garlic cloves, crushed
1 tbsp lemon peel
2 tbsp olive oil
1 each zucchini and red bell pepper, cut into strips
2 carrots, juilienned
1/2 onion, thinly sliced
1/2 lb mushrooms, sliced
1 lb medium shrimp, peeled and deveined, with tails left on
1 tsp salt
1/2 tsp black pepper
1 tbsp basil
1/2 cup dry white wine
2 tbsp chopped fresh parsley

Cook the linguine according to the pkg directions; drain and cover to keep warm. Meanwhile, in a large skillet, heat the oil over medium-high heat. Add the garlic and lemon peel to the hot oil. Add the vegetables and saute until almost tender. Add the shrimp. Sprinkle with salt, pepper and basil. Saute for 2 to 3 minutes, until the shrimp turns pink and is cooked through.

Reduce the heat to low and add the wine and parsley; simmer for 1 to 2 minutes. Toss the shrimp with the linguine and serve immediately. Squeeze a lemon over the shrimp right before tossing it with the pasta!
