1 (2 lb) pkg frozen hash brown potatoes, unthawed
1 tsp salt and pepper
1 cream of celery, cream of mushroom or cream of chicken soup, undiluted
3 cups grated sharp cheddar cheese or 1 1/2 cups cheddar cheese and 3/4 cup Swiss cheese
1 cup sour cream
1/4 cup finely chopped onion and red bell pepper
Dash hot sauce
1 (6 oz) can french fried onions or 2 cups crushed corn flakes mixed with 1/4 cup melted butter
1/4 cup grated parmesan cheese
Preheat oven to 350. Combine first 10 ingredients in large bowl. Transfer to 13x9x2-inch glass baking dish. Bake until top is slightly golden, about 1 hour 10 minutes. Combine onions and parmesan cheese and sprinkle on top. Bake until golden brown, about 5 minutes.
