1 1/2 cups flour
1/2 tsp salt
1/4 tsp baking powder
3 eggs, separated
1 cup confectioners sugar
1/2 cup butter, softened
1 cup sugar
1/3 cup lemon juice
2 tbsp grated lemon rind
Frosting
1 tbsp cream
1 cup confectioners sugar
2 tbsp butter, softened
Preheat oven to 350. Grease and flour a 13x9 inch baking pan. Whisk together dry ingredients. In a mixing bowl, beat the egg whites until soft peaks form. Add confectioners sugar gradually, beating after addition. Continue beating until stiff, straight peaks are formed.
In a large bowl, beat the butter; gradually add the sugar and continue beating until light and fluffy. Add the egg yolks one at a time. Beat for 1 minute. Add the lemon juice alternately with the flour mixture. Blend thoroughly. Add the grated lemon rind. Fold in the beaten egg whites gently but thoroughly. Pour into pan. Bake 25-30 minutes.
Frosting: Mix together until smooth. Remove the cake from the oven and frost in pat while still warm. Sprinkle with chopped nuts. When cool, cut into squares.
