5 oz fine egg noodles, cooked in salted water about 5 minutes
2 tbsp oil
1 onion, chopped
1/2 cup Chinese cabbage
1 lb backfin crab meat
1 cup chicken stock
Salt
1 tsp corn starch dissolved in 1/4 cup cold water
1/2 cup watercress
1 tsp soy sauce

Drain noodles after cooking and keep warm. Meanwhile, heat oil and brown onions and add cabbage. Add next 3 ingredients and simmer 5 minutes. Add cornstarch mixture and stir until thickened. Add chopped watercress and soy sauce. Serve over hot noodles. Serves 6
