1 large can pineapple chunks, drained, save juice
1 1/2 cups chopped celery
1 cup cashews or walnuts
3 large red delicious apples, chopped into chunks and dipped in pineapple juice
lemon mayonnaise (plain mayo mixed with juice of lemon
Cook chicken in a Dutch oven with about 1 1/4 cups water at 350 for 45-60 minutes. Let cool and cut into chunks. Mix remaining ingredients and refrigerate at least 1 hour before serving.
