1 pre baked 9" pie crust
4 ounces petite shrimp, cooked, peeled, and deveined
2/3 cup grated Gruyere cheese
2 eggs, beaten
1 cup light sour cream
1 tbsp finely-chopped green onions or chives
Salt and pepper, to taste
Preheat oven to 350. Evenly spread shrimp on the bottom of the pie crust. Sprinkle with grated cheese. Beat together eggs, sour cream, green onions, salt and pepper. Slowly pour the mixture into the pie crust. Bake for 25 to 30 minutes. Serve warm or cold.
