1 butternut squash, peeled, seeded, and cubed
1/2 cup mayonnaise
1/2 cup finely chopped onion
1 egg, lightly beaten
1 tsp brown sugar
1/8 tsp ground nutmeg and cinnamon
Salt and pepper, to taste
1/4 cup crushed saltine crackers
4 tbsp grated parmesan cheese
2 tbsp butter, melted
Preheat oven to 350. Boil squash in a large pot until tender. Place in a large bowl and fold in next 8 ingredients. Pour into a lightly the mixture into a lightly greased 2 quart baking dish. In medium bowl, combine remaining ingredients and sprinkle over the squash. Bake, uncovered, for 35-45 minutes or until the topping is lightly browned. Serves 6. Note: If desired, it is also good with the squash mashed and remaining directions stay the same.
