2 cups butter (no substitutes), softened
1 cup confectioners sugar
1 tsp vanilla extract
3 1/2 cups flour
1 cup chopped pecans
8 oz white candy coating
1/2 cup crushed peppermint candy
Cream together the butter and sugar. Stir in the vanilla. Gradually add flour. Stir in pecans. Refrigerate for 3-4 hours or until easy to handle. Roll into 1 inch balls. Place 2 inch aparte on ungreased cookie sheets. Bake at 350 for 18-20 minutes or until lightly browned. Remove to wire racks to cool. In a microwave bowl, melt candy coating; stir until smooth. Dip the top of each cookie into coating and then in the candy. Place back on rack until topping hardens. Makes 5 dozen.
