12 slices day old bread, crust removed
2 (8 oz) pkg cream cheese, softened
1 cup fresh or frozen blueberries, thawed
12 eggs
2 cups milk
1/3 cup maple syrup

Sauce
1 cup sugar
2 tbsp cornstarch
1 cup water and fresh or frozen blueberries, thawed
2 tbsp butter

Cub bread into cubes; place half in a greased 13x9 inch baking pan. Cut cream cheese into 1 inch cubes; place over bread. Top with blueberries and remaining bread. Beat eggs and add milk and syrup. Pour over bread mixture and chill overnight. Remove refrigerate at least 30 minutes before baking. Cover and bake at 350 for 30 minutes.

Sauce: In a saucepan, combine sugar and cornstarch. Add water and boil for 3 minutes over medium heat, stirring constantly. Add water. Boil 3 minutes or medium heat, stirring constantly. Stir in berries. Reduce heat and simmer 8-10 minutes. Add butter. Pour over French toast.

VARIATION: To egg mixture, add 1/2 cup flour, 1/4 tsp salt and 1/2 tsp vanilla extract. After layering blueberries on first layer of bread, sprinkle 1/2 cup chopped nuts. Continue as above. Serves 8
