1/2 cup stir-fry sauce
1/4-1/2 tsp crushed red pepper
4 (6 oz) salmon fillets, skin removed
1 red bell pepper, thinly sliced
1 cup thinly sliced carrots
2 cups diagonally sliced pea pods
4 green onions, cut into 3/4 inch pieces
2 tbsp chopped cilantro
Heat broiler. In a small bowl, stir together stir-fry sauce and crushed red pepper. Reserve 1/4 cup of the mixture; brush remaining mixture over salmon. Broil 4-6 inch from heat 8-10 minutes or until salmon just begins to flake.
Meanwhile, spray large skillet with cooking spray; heat over medium-high heat until hot. Add bell pepper and carrots; cook 2 minutes, stirring frequently. Add snow peas; cook 1 minute. Add green onions; cook 1 minute. Stir in reserves stir-fry mixture; cook 1 minute or until vegetables are crisp-tender, stirring to coat with sauce. Serve salmon over vegetables; sprinkle with cilantro. Serves 4
