4 large russet potatoes, peeled and diced
1/4 cup milk
1 cup corn kernels
1/2 cup diced red bell pepper
1/4 cup fresh cilantro leaves, minced
1/4 tsp granulated garlic, ground cumin and chili powder
1/8 tsp salt
Dash pepper
2 tsp oil

Boil potatoes until tender. Drain and place in a bowl alog with milk and mash. Stir in corn, bell pepper and seasonings. Form into 2-3 inch patties.

Place a skillet over medium-high heat and lightly coat with oil. Fill pan with patties, cook until golden, turn and then brown on the other side. Place on a platter in a warm over and continue to cook until remaining patties are through, using addition oil as necessary. Serves 4-6
