6 tbsp chopped onion
6 clove garlic, minced
3 tsp olive oil
3 cups Portobello mushrooms, sliced
3 cups canned Italian tomatoes, chopped and reserve liquid
15 small black olives, sliced in half-and-half
1/2 tsp crushed red pepper
6 cups cooked penne pasta
9 tsp grated parmesan cheese
Fresh basil leaves, garnish

Saute first 3 ingredients and stir to coat. Stir in next4 ingredients. Cover and simmer until mushrooms are tender. To serve, in serving bowl arrange pasta; top with mushroom-tomato mixture and toss to combine. Sprinkle with cheese and garnish with basil. Serve 6
