1 pkg 16oz whole portabella mushrooms
I pkg (17 oz) burrito style flour tortillas (8)
I can (15 oz) refried black beans
8 oz goat cheese crumbled
1/2 c green onions about 4 sliced in half lengthwise and chopped
8 oz finely shredded Cheddar Jack cheese

Remove stems and gills from mushrooms and spray with cooking spray ad grill . cook 5 or 6 min until tender. (outside, inside grill of even in a skillet if necessary)
Slice into very thin 2 inch pcs

Spray one side of tortilla with cooking spray and place sprayed side down. Spread 1/4 of refried beans on tortilla to cover. Sprinkle evenly with 1/4 of each, goat cheese, mushrooms, green onions, jack cheese

cover with another tortilla and spray top


preheat large skillet over med high heat

transfer quesadilla to hot skillet an cook 2 or 3 min until light brown. flip it over and
cook another 1 or 2 min until cheese it melted

transfer to cutting board and cut into 4 pcs
